Cooking Block... Kind of Lifted!

So I am blogging from my Blackberry via laundrymat. :-p It's my favorite chore... Not at all! Anyways, my cooking block (its like writer block but with cooking), has been temporary lifted but is still there.
So I have finalize three out of four courses for the menu this coming Saturday. I am doing a dinner for friends where I do all the cooking and they buy the ingredients. I am not getting paid I am doing this for the sake of my creativeness and practice. It entails a 4 course menu and some amouse bouche/canapes/ finger foods. They are: dates stuffed w/blue cheese wrapped in procuitto and 2 kinds of bruschetta. For those that do not know what bruschetta is, it is a slice of toast, usually a french baguette with some sort of topping. Traditonally the Italians use tomatoes, shallots, garlic, parsley, salt, pepper, balsamic vinegar, and olive oil. Which is one of my favorites and is on the menu. My other one is inspired from one of my absolutely favorite dessert places in San Diego, Extraordinary Desserts. They have one called a ping pong, which has goat cheese with a mango chutney. Mine will have goat cheese with a stone fruit chutney since it is stone fruit season! I love sweet and savory food!
Ok now for the 3 courses! First course, marinated grilled calamari with a heirlom tomato and sweet corn salad! Balsamic vinegar dressing and some basil.
Second course, seared scallop with a tomato sauce mushroom risotto.
Third course, fish (hopefully halibut or bass) with a citrus supreme arugula salad and a lemon/leek butter sauce.
So, for the fourth course, I was thinking of doing a pork dish with some cherries and a cherry sauce. But I am not completely drawn to it yet!
