So when my laptop is back on.... It has been back on but summer at the hotel took over as it probably will every summer that I am there. Summer's over but Banquet season has begun!
I miss blogging in here. Anyways let's go on about how my night at work went last night. It seriously had to be one of the slowest shifts I have worked so far. While I was trying to plate my desserts I kept getting milkshake orders... weird on a cold night. Anyways after plating... my co-worker comes and grabs the rack... as I walk away... next thing I hear is clang clang clang... there goes HALF of my desserts crashing to the floor! Yeah I know! So... I panic and pace back in forth for about 10 seconds muttering the F word, trying to figure out if I have enough cheesecake for the party. In short I did end up having enough cheesecake, but thank God I pulled it off and on time. But the rest of the night after that happened seemed so much slower than usual.
I do wish I had more time to experiment cooking. Plus I know it is starting to get cold but let's face it summer did not give me any time to experiment with ice cream flavors!
I am happy the football season has started. Chargers you guys all the potential in the world! Make it work. BTW the NBA lockout is pissing me off.

M.I.A
So I know I have been M.I.A. Sue me I have been working two jobs and pulling doubles and just trying to live my life as best as I could. Oh yeah, I have also attempted to have some sort of social life along with my crazy work schedule. It is about to go back on track and I guess I had the sudden need to blog. Like I said I work two jobs now, I have been at Loews Santa Monica Beach Hotel for almost two months as well, a cook. It has been an overwhelming sometimes good experience and very different. I am enjoying the journey and challenges in some twisted way. I am still at Michael's and I am currently working on some new desserts that I can hopefully post soon! :-D
Anyways last month was a great month for great eats! I guess I kinda celebrated my birthday that way. We ate at Mozza Pizzeria and I must say it was just as good as the first time I had it! If you are ever in the Los Angeles are it is definitely a must HAVE! Good luck getting reservations though! It is worth a try and at 11pm is the best time to go, I know its late but you have to have the Pizza! I had their coach goat cheese, scallions, bacon and garlic pizza. It was heaven! To start I had their bone marrow al forno... it is seriously my absolutely favorite appetizer there! For dessert I had my all time favorite Budini, I just love the sweet/savoriness to it! Yum! I am getting hungry thinking about it! :-D
I also tried Westside Tavern at the Westside Pavillion mall with a friend who was absolutely raving about. It was also one of the top ten best new restaurant to open in LA for Los Angeles Magazine. We started off with their special appetizer, Rock Shrimp Ceviche. I mean I know I can probably get it anywhere but I had a really bad craving for it. Let me tell you, it had the most perfect balance of flavors and you can taste everything in it. It was seasoned just right, had the right amount of acid, oh my mouth waters thinking about this one! Yum! Then we both had their Mary's Farm Chicken Breast served with Mushroom-Spinach Risotto and Crispy Onions! It is a must try if you ever go there! The skin of the chicken was nice and crispy and juicy oh man! I dream of good chicken like that! For dessert we had their doughnuts. I know, sounds crazy right?! But it was nice and fresh. Crispy on the outside and soft on the inside served with chocolate sauce and their raspberry coulis. I personally like the raspberry coulis with the doughnuts myself, it was a perfect compliment. We also had their Mango Daquiri wish was really nice and refreshing with a kick!
Memorial Day weekend I went back home to San Diego and had some good times with friends at Las Hasdas in Downtown. Happy hour is from 10pm-Midnight every night. Go. Great margaritas the bar food is ok. It is a good place to lounge around and really hang out with friends.
I do not care what anyone says. Lakers all the way through it all!

A Couple Reviews and Possible Goals
Over the weekend some friends from back home came up for my old roomie's 25th Birthday bash. On Saturday night we went to Fabiolus Cafe on Sunset in Hollywood. Thumbs down! I had been to that place before but I did not get to dine there because I met up with some friends real quick and had to go somewhere. Well this time I had the linguine with the shrimp and asked to add capers to it. I think the capers made it actually better. Compared to a couple of my other friends' dishes which I did try mine was decent. One of my friends had gnocchi with a four cheese sauce, my guess for one of the cheeses was Gorgonzola. Why you ask? Because that is all I could taste! Do not get me wrong I love Gorgonzola but I can not eat a bowl full of that stuff, trust me that is all it was! My other friend had their chicken Parmesan. Who knew that thing could be so BLAND! I was upset for them! The calamari was decent that we had for the appetizer, but I must say I probably will never show my face there again. Another thing that disappointed me was that I wanted fresh linguine and not the dry one. I was craving for some FRESH pasta! I still need to fulfill that craving! So like I said thumbs down and I do not recommend going back there.
That Sunday we went to one of my favorite brunch spots The Grub! Their French toast really is AMAZING and I completely suggest to order a side of their crack bacon to go along with it! For me it hits the spot for a little sweet and savory. Although, the bad side this time around for going there was the fact that my other friend found not one, not two, but THREE eggshells in here omelet! DISAPPOINTING! I am not going to lie, it does happen... small ones sure... maybe one... MAYBE two... but seriously THREE?! That makes me upset. What was wrong with the chef/cook that morning?! You can clearly see that stuff! Their Spicy Crab Artichoke dip has yet to let me down! I almost always order that when I go there. The spicy BBQ hits the spot. The tuna for me was ok, I did not quite taste the zestyness as much, probably because I was a little bit under the weather. So other than the eggshells it was pleasant as always, Betty, co-owner and season 2 of Top Chef contestant was pleasantly walking around and talking to someone. I really love it when the owner comes around and talks to their customers!
Tonight for dinner I went to Nordstrom's Cafe. I must say their Santa Fe Chicken Sandwich goes on my all time best/favorite chicken sandwich ever! The spices the flavors just all melt in my mouth. It is a definite must try! The bread is toasted to perfection! When my friend first suggested this place I was a little skeptical, because it is in a department store and I just did not know if it would make me want to come back. The first time I went I had a Greek inspired chicken sandwich was good, I would order it again! The second time was when I fell in love with the Santa Fe Sandwich. I just wanted to try something else. I tell you what though. That is the one thing I will go back for! I was craving it so we went tonight. Oh my goodness! Just was good as ever! Not bad for $10! It includes either chips or a salad. I usually get the salad with either the balsamic or the ginger sesame dressing.
Alright, I have a couple of goals lined up for this blog. The first is for me to read this culinary books/novels and have one done every MONTH and write my thoughts on the book! So, for March I am giving myself TWO weeks to finish Kitchen Confidential! I have actually been reading it for a while and I have been putting it off finishing it! If I can get more done in a month than more power to myself! My second goal is to blog about someone, it does not matter who, but blog about someone or something who has caught my eye in this culinary/sports world of mine. I guess I should start some sort of video, or tips or something of the week or something along those lines to get this blog on the move.

Food Recap
So... Food recap. Last month was Dine LA. Well actually the last week of January and the first week of February was Dine LA. Lets just say I was glad when it was over. I do not miss it. It really is one thing to work behind the scenes of something like that, than to eat there. It is a pain for everyone. I kind of felt guilty eating at Matteo's in Westwood just because I know how hard they work doing their regular menu as well as the Dine LA menu. But Matteo's Dine LA menu was absolutely amazing! I had their beefsteak tomato as an appetizer, braised duck lasagna, and their tiramisu. I give that meal 5 stars! :-D
Valentine's day at the restaurant was not so bad at all. I just wanted it to be done, that is what happens when you serve dessert, you are the last one to leave!
Off the Menu was an article in the LA times last month about Filipino Chefs. Read it! I myself did not realize that their is quite a few of us out there working in the industry! I am proud and happy! This article talks about how a lot of these chefs do cook in the fine dining of the industry but tend not to bring the Filipino food to the fine dining table. Mostly, the bring it to staff meal, sometimes known as staff meal. I myself have tried a deconstructed version but failed in execution to bring my Filipino heritage to the table. I am however, not going to give up to bring that to the table somehow, someday. I love our food and I want the rest of the world to try and appreciate our food. It really is comforting and soothes my soul!
So the latest buzz that has been going around Santa Monica is The Hump Restaurant's big controversy of serving endangered Sei Whale Meat, illegally. I say its illegal pay the price and if they really did get it out of the trunk of a Benz... that leaves me speechless with my jaw dropped down and quite frankly disgusted. Make yourselves aware of what you are not allowed to sell. If you are aware do not try to sell it. The Hump issued this apology: "An Apology From The Hump
We write to address the misdemeanor charge recently filed by the U.S. Attorney. The charge against the restaurant is true: The Hump served whale meat to customers looking to eat what in Japan is widely served as a delicacy. In serving this meat, The Hump ignored its responsibilities to help save endangered whales from extinction and failed to support the world community in its uphill fight to protect all endangered species. While The Hump cannot undo the damage it caused, it will put into place procedures to ensure that it strictly complies with the laws and becomes a good corporate citizen. We sincerely apologize. We pledge to work hard to re-earn the trust of the public and respect of our customers."
Is it me or do they not seem that sincere. For me its the fact that they had to justified they did what they did because the meat is considered a delicacy in Japan. It sounds more like they are sorry for getting caught. I am just saying.
I am in the middle of experiment with desserts at work. I shall post it when I am done.

My Sports Recap of February and then some...
In case you did not know I am a huge sports fan! :-D Forgive me for the lack of me blogging. So much has happened, in short I cut my finger really bad where I needed stitches, Dine LA kept me busy, I was busy in general, getting sick did not help at all. I really do not like playing catch up with my entries but here goes.
Lakers had some great games bad games. What can I say. Kobe is a beast!
The Chargers have practically let the whole team go EXCEPT for KAEDING which I am upset about! I am even more upset that they let the most awesome and kind-hearted player LT go! I truly am sad that he is gone but I will watch more Jets games in support of him because, yes I believe he is that GREAT!
Even better February had the 2010 Olympics in Vancouver! I watched as much as I could. Although, I do know more about the summer Olympics I still enjoyed this just as much. I had my withdrawals. My favorite event of all is short track speed skating! Yes I am an Apolo Ohno fan, JR Celski fan as well! Also a Simon Cho, Travis Jayner, and Jordan Malone fan. Ok, ok overall I am a team USA fan. I do think Apolo was robbed a medal and that JR should not have been DQed. Lindsey Vonn and Bode Miller greatly deserved their medals! Shaun White, seriously no one like him at all! What a way to represent San Diego! Team USA Hockey team what a way to fight. I have never enjoyed hockey so much before! I loved it!
I have been trying to follow the Paralympics on Universal Sports. I am truly amazed and proud to see these athletes compete.
I was trying to catch short track but I was at work. Good luck to the guys there!
